{salsa & sass}

Strawberry Corn Salsa

(from April-May 2012 Healthy Cooking magazine, pg 47)

2 cups of fresh stawberries, chopped

2 cups of grape tomatoes, chopped (1 pint yields less)

1 pkg (10 oz) frozen corn, thawed

1 green onions, chopped

3 Tbsp. minced fresh cilantro

Above five can be prepared ahead in large bowl.

Following 3 can be mixed ahead in small bowl 

and drizzled & tossed over other an hour before serving.

1/4 c olive oil

2 Tbsp raspberry vinegar (can be pricey)

2 Tbsp lime juice

Yield:  5 + cups.  Refrigerate & serve with chips.

(Can also be used in fish tacos or with salmon)

Easter Egg Candles

Love her!!

For Easter Sunday, I went to my dear friend Jan's home in Colorado Springs. We had a delicious smoked ham and shared so much laughter & joy with her parents and brother! I missed my family back at home in Chicago though!! The tulips blooming in the background and the green trees made it clear that spring is here. Going to church in the morning was so wonderful and such a good reminder that Jesus has overcome the world. A love like this... It has never been known! I hope your Easter was full of love and gratitude. 

{going to a bridal shower}

My friend Lauren is getting married this summer to the

man of her dreams, Blake. Today she had her bridal shower which was beautiful.

So full of joy and laughter! I'm so happy for her and was so glad to share 

this day with her. A sunny Colorado day!

 Today was college spirit day at my high school, so of course I represented the University of Colorado all the way with my t-shirt. After school, I went to a Good Friday service at my church and decided to get a little bit more dressed up. Spring is here and its time to wear wedges :) Feeling tall is nice!! For my scarf, I originally just had it looped the basic way, but it was too long so I made it into an "infinity scarf" by tying the two ends together. I ended up liking the way the knot looked in front, so I pulled it forward.

This beautiful & bright day in Colorado inspired me to pair these amazing colors. A rich plum and an electric lime green tied together with a chesnut brown leather. Nothing like making brownies with kitchen windows wide open!

Back from Panamá

Hey guys! 

Sorry I've been gone for so long now. Almost 2 weeks since

I wrote in my blog! During that time, 

I had the privilege of traveling to San Miguelito, Panamá, 

over my spring break with my church and was able to 

serve the Lord and show his love to the people, as well as 

receive love in indescribably beautiful ways.

I spent my time playing with kids, telling stories with my host family,

speaking a ton of Spanish, and getting to know the people of Panamá. It was a wonderful 

experience and I feel so blessed that I was able to go and live

with a Panamanian host family for 8 days!

As for my first day at work, I decided to

wear my floral purple skirt, which I absolutely love, with

 boots because it was still a little chilly

 outside after the snow fall on Tuesday.
